Low Fat Vegan Cooking

I am a friend of the footless,
I am a friend of all bipeds,
I am a friend of those with four feet,
I am a friend of the many footed!

Hello and Welcome!

This site is dedicated to compassion, greater health and leanness.

Most of the recipes in this blog are less than 10% fat. There are a few higher fat dishes in the Feasts category. Most foods are gluten free except in Feasts.

I usually add salt when i sit down to eat, when you really can taste it on your food. But for those of you who want to add it while cooking, the recipes have salt listed for 1/8th teaspoon per serving, 1 1/2 teaspoon low sodium tamari, or 1 1/2 t. miso per serving. For recipes that tamari enhances, i do use it while cooking.

Sugar greatly enhances some food, and i use it sparingly. I aim for no more than 2 teaspoons a day, except for Feast dishes.

I use whole grains such as brown rice, quinoa, and wild rice, as well as potatoes and sweet potatoes. For Feasts, i use whole wheat or brown rice flour, corn tortillas or corn meal. These are the most nutritious starches.

About the lower case i… my Buddhist teacher taught us to use this to emphasize our oneness with all sentient beings. In English, he, she, and you are not capitalized, so why i? (In other languages such as French, German, and Spanish i is not capitalized.)

Happy cooking!
